Ingredients
- 2 lbs red tomatoes, peeled, halved, seeded & finely diced @ 3 C
- 2 finely diced celery ribs
- 1 finely diced red onion
- 1 peeled, cored, seeded & diced green bell pepper
- 1 T finely chopped lemon peel
- 2 T capers
- 3 T EVOO
- 2 T lemon juice
- Salt & pepper
Preparation
Step 1
In bowl, toss tomatoes with celery, onion, green pepper, lemon peel & capers.
Add olive oil & lemon juice; toss. Season with salt & pepper. Refrigerate at least 30 min. before serving.
