Fresh Tomato & Caper Salad

Ingredients

  • 2 lbs red tomatoes, peeled, halved, seeded & finely diced @ 3 C
  • 2 finely diced celery ribs
  • 1 finely diced red onion
  • 1 peeled, cored, seeded & diced green bell pepper
  • 1 T finely chopped lemon peel
  • 2 T capers
  • 3 T EVOO
  • 2 T lemon juice
  • Salt & pepper

Preparation

Step 1

In bowl, toss tomatoes with celery, onion, green pepper, lemon peel & capers.
Add olive oil & lemon juice; toss. Season with salt & pepper. Refrigerate at least 30 min. before serving.
