Ingredients
- 2 ears corn, husked or 1 small can corn
- 1/2 can small black beans, drained and washed
- 2 TBSP olive oil
- 2 cucumbers, peeled, seeded and diced
- 1 small red onion, minced
- 1/2 pint grape tomatoes, diced
- 1 avocado, peeled and diced
- 2 cloves garlic, minced
- 3 TBSP fresh cilantro, chopped
- 1 jalapeno, seeded and minced
- 1/4 tsp gingerroot, minced
- 1/4 C lime juice
Preparation
Step 1
Preheat grill. brush corn with oil and season with salt and pepper. Grill corn about 10 minutes, until tender and light brown. (Or drain a small can of corn and place in frying pan with olive oil, salt and pepper and roast for 5-6 minutes over medium heat.)
Cut corn kernals into a bowl, add remaining ingredients and gently toss to blend.
Serve with tortilla chips or over toasted slices of cuban bread.
