Coconut Baked Chicken

Ingredients

  • 4 whole Boneless, Skinless Chicken Breast Halves
  • 1 Tablespoon Coconut Oil, Melted
  • 1 cup Seasoned Bread Crumbs
  • 1 teaspoon Salt
  • 1 Tablespoon Parsley Flakes
  • 1 teaspoon Garlic Powder

Preparation

Preheat oven to 375 F. Cut the chicken breasts into large strips. Basically I cut each breast in half.

Put the melted coconut oil on a plate and roll the strips around in the oil.

Put the breadcrumbs on another plate or shallow bowl. Add the salt, parsley and garlic powder into the breadcrumbs and mix well.

Dip the oiled chicken into the breadcrumbs and coat thoroughly.

Place on a rimmed baking sheet and bake at 375 F for 30 minutes.
