Boursin Chicken with Spinach

  • 2 chicken breast, butterflied to even thickness
  • 1 package boursin cheese
  • 1/2 package frozen spinach, thawed and squeesed dry
  • or 5 oz fresh spinach, blanched, with coarse chop
  • oil
  • bread crumbs
  • garlic powder
  • butter

Preparation

Step 1

In a small bowl, crumble the Boursin cheese with a fork.
Sprinkle the spinach over the cheese avoiding bunches, and mix until evenly blended. Fill chicken breast, smooth side down, with 1/2 the mixture. Press the mixture into a nice compact lump and then wrap the chicken around it to cover any exposed area of the stuffing. Try to maintain an even thickness of the chicken layer. Place the chicken, smooth side up, in a greased baking dish or pan. Add a pat of butter on top, sprinkle with garlic powder and bread crumbs. Repeat with second piece. Bake at 375 for 25 minutes.
