BREAST****Chicken Souvlaki with Tzatziki Sauce (ActiFry)

01/02/17 - In ActiFry, ditto, although it does make a bit of a mess of the blade. Served as a meal platter with the salad and pita as described below and except for the Tzatziki, Dan ate it all, including the tomatoes.

Ingredients
- SALAD:
- 8 ounces skinless, boneless chicken breasts, trimmed and cut into 1-inch cubes
- 2 teaspoons fresh oregano, minced, or 1/2 tsp. dried
- 1/2 teaspoons fresh thyme, minced
- 1 small shallot, minced, optional and not really necessary
- Zest and juice of 1 small lemon
- 1 garlic clove , minced
- 1 tablespoon extra-virgin olive oil
- Salt and pepper to taste
- 1/4 red onion, thinly sliced
- 8 - 10 cherry tomatoes, halved
- 8 oil-cured olives, pitted and halved
- 30 grams feta cheese, diced
- juice of 1/4 lemon
- 1 teaspoon olive oil
- TO SERVE:
- 3 small flour tortillas, (90 - 100 calories each) halved and heated in a 200 degree oven or equal quantity of pita bread or Naan bread, warmed

Preparation
Step 1
*Whisk* oregano, thyme, shallot, lemon zest and juice, garlic and oil together in a small bowl. *Add* chicken and *allow* to marinate for at least 30 minutes, preferably overnight, removing from fridge 1 hour before cooking.
Place chicken and its marinade in the Actifry pan and cook for 10 - 12 minutes.
Serve with the salad, tzatziki and warm flour tortillas or pita bread, squeezing a wedge of lemon over and drizzling with a few drops of best EVOO. Wrap pieces of the chicken up and top with the salad and sauce to eat - Yummy
