Ingredients
- 4 tbs unsalted butter
- 1/4 cup brown sugar
- 2 tbs. maple syrup
- Finely grated zest of 1 lemon
- Juice of 1/2 lemon
- 1 tsp vanilla
- 1/2 tsp nutmeg
- 6 sweet potatoes (12 oz.) peeled and cut into large cubes)
Preparation
Step 1
Mix syrup ingredients and swirl over low heat until combined- about 5 mins.
Cook potatoes until very tender and drain.
Mash potatoes until smooth and drizzle syrup all over.
Serve hot or cover and reheat later in a 350 oven for 15 to 20 mins.
