Ingredients
- 2 pounds beef short ribs, cut in 2" pieces
- salt and peopper
- 2 tb veg oil
- 1 med onion chopped fine
- 3 garlic cloves, chopped fine
- 1 cup fruity red wine
- 2 cups beef stock
- 3 sprigs fresh thyme
- 1 bay leaf

Preparation
Step 1
Trim excess fat from beef short ribs.
Sprinkle both sides of ribs with s & P
In dutch oven heat oil over medium - high heat
Add ribs and brown on all sides for 5 - 7 mins
remove ribs to plate set aside
Remove all but 1 tb fat from pan
Reduce heat to med and add onion and garlic to oven
cook covered for 2 mins
Add wine, stirring to scrape up browned bits from bottom of pan
Add stock, thyme, bay and browned ribs
Bring to a boil remove pan to oven and braise at 225 for 4-5 hours or until meat is falling off the bone. turning occasionally
Remove meat to plate and keep warm
Strain cooking liquid into large saucepan, bring to a boil and cook for 10 -12 mins or until reduced until half
