Pancakes, cornmeal buttermilk

Gluten free can be challenging, but it doesn't have to be flavorless. With alternative ingredients, you can still eat cheesy, doughy pizza.

Ingredients

  • 2 cups stone-ground yellow cornmeal, medium grain
  • 1/2 c rice flour
  • 1 Tbsp sugar (or Splenda)
  • 2 Tsp gluten free baking powder
  • 1/2 Tsp gluten free baking soda
  • 1/2 tsp salt
  • 1 1/2 c buttermilk
  • 1/2 c water
  • 1/4 c vegetable oil
  • 1 large egg

Preparation

Step 1

In large bowl, combine cornmeal, rice flour, sugar, baking powder, baking soda, and salt.

In medium bowl, beat buttermilk, water, oil and egg with fork.

Add dry ingredient mixture and blend.

Lightly oil griddle, and cook pancakes over medium heat until brown. Flip and cook until second side browns.
