Chicken Fricasee

Ingredients

  • Chicken, 4 pieces
  • 1 onion, chopped
  • 1 cup mushrooms, chopped
  • 1 1/2 cups chicken stock
  • 2 Garlic cloves
  • 1 Tbsp. flour
  • 1 egg yolk
  • 2 tbsp. sour cream
  • 1 tbsp. tarragon, chopped

Preparation

Step 1

- Brown chicken in pan. Remove and set aside.

- In same pan, saute onions, mushrooms, and garlic. Add chicken back. Add the flour. Brown. Add stock. Cook until chicken is done, about 1/2 hour. Remove 1 cup of stock for sauce below.

For sauce:
- In separate saucepan, put in 1 cup of the above chicken stock. Add sour cream. Add egg yolk. Stir and heat until egg is cooked, 2 minutes.

- Add 1 tsp. lemon juice and add tarragon. Stir. Take off the heat.

- Pour chicken sauce over the chicken.
