Gingerbread Cookies (recipe from star pan)

Ingredients

  • 4 cups flour, divided
  • 1/2 cup firmly packed brown sugar
  • 3/4 cup molasses
  • 2 eggs
  • 1/2 cup (1 stick) butter, softened
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/2 tsp allspice
  • 1/2 tsp ground cloves
  • 1/2 tsp ground cinnamon
  • 1/2 tsp ground ginger

Preheat oven to 375°. Spray pan with spray.

In a large mixing bowl, combine 1 1/2 cups flour and remaining ingredients at low speed, until blended, scraping bowl often. Increase speed to medium and beat two minutes or until very smooth. Reduce speed to low and add remaining flour, 1 cup at a time, until dough is very stiff. (If using a small mixer, the last flour may need to be stirred or kneaded in by hand).

Press dough into pan cavities. Bake 6-8 minutes or until edges are lightly browned; remove to cooling grid to cool.
