Ingredients

  • 3-5 pound chicken
  • 1/2 cup olive oil
  • 1 large spanish onion
  • 1 red pepper
  • 1 yellow pepper
  • 3-4 large garlic clove [minced]
  • 1 1/2 pound sausage [cut in 1 1/2 inch pieces]
  • 16 ounce can plum tomatoes
  • 1 tablespoon paprika
  • 1-2 bay leaves
  • 2 cup long grain rice
  • 1/2 cup white wine
  • 3 cup chicken stock
  • 1 teaspoon salt11 teaspoon pepper
  • 1 bunch chopped parsly

Preparation

Step 1

Salt and pepper chicken.
Carefully brown in heavy dutch oven about 15 minutes.

Add onion, peppers, garlic. Cook 5 minutes.

Add paprika and salt

Add wine- reduce a few minutes.

Add tomatoes, chicken stock, bay leaves.
Gently simmer.

Cover with lid. Cook in oven 375 degrees 40 minutes.

Serve over rice.
