Ingredients
- 2 lb. fresh asparagus (thick stems are better)
- 2 Tbsp. olive oil
- 1/4 cup grated Parmesan cheese
- 2 Tbsp snipped chives
- 1 Tbsp. lemon juice
- 1/4 cup butter, softened
Preparation
Step 1
Preheat the oven to 450 degrees.
Place the asparagus in a 3-quart rectangular baking dish. Drizzle with olive oil and sprinkle with the cheese.
Roast, uncovered about 15 minutes, or until crisp-tender, using tong to toss lightly twice during roasting.
Meanwhile, in a small bowl, combine the butter, chives and lemon juice.
Transfer the asparagus to a warm platter. Serve with the butter mixture.
