Slow Cooker Barbecued Beef with Potatoes

Ingredients

  • 12 ounce bottle R Sauce Any flavor
  • 2 pounds baking potatoes
  • 3.5 to 4 pound beef round roast
  • Corn Tortillas or Hamburger Buns

Preparation

Step 1

Peel the potatoes and shred them using the large hole of a box grater or a food processor fitted with a shredding blade. Working in small batches, squeeze the potatoes over the sink to get rid of excess moisture, and then place them in a 4 1/2 quart slow cooker. Pour the sauce over the potatoes and mix well with a wooden spoon. Make a shallow center in the middle of the potatoes and place the roast in there.. Cover and cook on low for 10 hours or until roast is tender.
Remove the roast from the slow cooker and shred it. Return it to the cooker and mix well with the potatoes, then cook on low 30 minutes longer. Serve on either buns or tortillas. Cole slaw or potato salad are great sides to serve.
