Ingredients

  • 2 cups all-purpose flour
  • 1 tsp cinnamon
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 3 eggs
  • 1 1/4 cups sugar
  • 1/2 cup shredded coconut
  • 3/4 cup raisins
  • 1/2 cup shredded carrot
  • 1 small shredded apple
  • 1/2 cup crushed pineapple, drained
  • 1/2 cup chopped toasted walnuts
  • 3/4 cup canola oil
  • 1 tsp vanilla
  • 1/4 cup rolled oats

Preparation

Step 1

Preheat oven to 350°F.
1. Sift together flour, cinnamon, baking soda and salt. 2. In a separate bowl, whisk eggs, sugar, coconut, raisins, carrots, apples, pineapple, walnuts, oil and vanilla.
3. Add the dry ingredients to the egg mixture, stirring until just incorporated.
4. Scoop into paper-lined muffin cups. Sprinkle with rolled oats. Bake for 18-20 minnutes or until golden-brown.
