Caeser Salad With Horseradish

Horseradish gives this salad a definitive bite:

Ingredients

  • 1 large head romaine lettuce, rinshed, dried broken into bite-size pieces.
  • 3 cloves garlic, finely chopped
  • 1 2 oz anchovy fillets, drained, chopped
  • 4 Tablespoons red wine vinegar
  • 2 tablespoons mayonnaise
  • 1/2 teaspoon dry mustard
  • 1 teaspoon Worcestershire Sauce
  • 2 Tablespoons drained extra hot horseradish, or to taste
  • 1/2 cup olive oil
  • 1/2 cup freshly grated Parmesan, plus extra for serving.
  • 1 1/2 cups croutons

Preparation

Step 1

Place garlic and anchovies in blender, blend until finely chopped.

Add the remaind ingredients, except oil and parmesan cheese. Blend.

With the blender running slowly add olive oil in a thin stream until thickened. Blend in Cheese. Cover and chill for several hours, reblend if necessary. Toss the dressing with lettuce until thoroughly coated. Add croutons and toss again.
