Crostini with Thyme Roasted Tomatoes

  • 4 plum tomates, halved
  • EVOO
  • 1 tsp dried thyme
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 8 1/2 inch thick baguette slices
  • 2 garlic cloves, halved

Preparation

Step 1

1. Preheat oven to 275

2. Halve the plum tomatoes and drizzle with olive oil, and sprinkle with thyme, salt and pepper. Roast until tomatoes are soft and slightly shrunken, 1 1/2 to 2 hours.

3. Remove and raise oven temp to 400. Drizzle the baguette slices with olive oil and bake until golden brown, 10 minutes. Rub toasts with a hlaved garlic clove and top each with a roasted tomato.
