Cranberry Champagne Vinegar and Vinaigrette
Servings: 6 cups vinegar
Makes a beautiful holiday gift--look for inexpensive bottles at dollar stores, etc. Dressing is sweet and tart and delicious.
- 1 package fresh cranberries
- 3 cups white wine vinegar
- 1 bottle champagne
- For dressing:
- 1 T maple syrup
- 1/2 t dry mustard
- 3 T cranberry champagne vinegar
- 1/2 cup EVOO
For vinegar: Combine berries. vinegar, and champagne in stainless steel sauce pan. Bring to a boil, reduce heat and simmer gently for three minutes. Cool and pour into a 3 quart jar and cover with non-metallic lid. Let stand 2 weeks in a cool, dark place. Strain and discard berries. For dressing: Whisk all ingredients together or shake in jar.
