Swedish Thumbprint Cookies

Ingredients

  • 1/2 cup unsalted butter, softened
  • 1 cup flour
  • 1/4 cup sugar
  • finely chopped nuts of your choice
  • 1 egg, separated
  • Solo fruit filling

Preparation

Step 1

Preheat the oven to 350 degrees.

Cream the butter and sugar. Add the egg yolk and blend. Mix in the flour.

Form into 1-inch balls. Put the egg while into a bowl, and roll the balls in the egg white and then in the ground nuts. Place on ungreased cookie sheets.

Bake the cookies for 10 minutes.

Place fruit filling into decorating bags.

Remove the cookies from the oven, and make a small hole in the center of the cookie. Pipe the fruit filling into the holes.

Put the cookies back into the oven and bake for an additional 12 minutes.

Remove from the oven, and cool on racks.
