Bran Muffins

Ingredients

  • 1/2 cup egg substitute
  • 1 cup non-fat milk
  • 1 tsp cinnamon
  • 1/4 tsp salt
  • 2 tbsp vegetable oil
  • 1/4 cup unsweetened applesauce
  • 1/3 cup raisins, packed
  • 2 1/2 tsp baking powder
  • 1/3 cup brown sugar, packed
  • 3/4 cup wheat bran, crude
  • 1 cup all-purpose flour

Preparation

Step 1

Preheat oven to 400F.

Stir together all-purpose flour, wheat bran, wholewheat flour, baking powder, cinnamon and salt into large mixing bowl. Make a well in the center and seat aside. In separate mixing bowl stir together milk, egg substitute, browm sugar, applesauce and oil. Add to flour mixture, stirring just until moistened. Batter should be thick and lumpy. Fold in raisins. Lightly spray desired number of muffin cups with cooking spray or line with paper baking cups. Fill muffin cups two-thirds full. Bake 14-18 minutes or until brown.
