GRILLED TOMATOES W/ OREGANO AND LEMON

Ingredients

  • 2 cloves garlic, minced
  • 1 TBS lemon zest, finely grated
  • 1 TBS lemon juice
  • 4 tbs fresh oregano, finely chopped
  • 2 TBS EVOO
  • 4 large tomatoes, halved
  • coarse salt
  • fresh ground black pepper

Preparation

Step 1

1. Heat grill to medium high
2. In small bowl, combine garlic, lemon zest and juice, oregano and 2 TBS EVOO. Season w/ salt and pepper.
3. Clean and lightly oil hot grill.
4. Brush tomato halves with add'l 2 TBS EVOO. Place cut side down on grill and grill until lightly charred, about 4 minutes. With a metal spatula, flip tomatoes and grill until skins blister and begin to char, add'l 2-3 minutes.
5. Transfer tomatoes to serving platter, season w/ salt and pepper and drizzle with oregano-lemon oil. Serve warm or at room temperature.
