Slimming World Butternut Squash, Rosemary & Garlic Soup

This soup is so filling, quick and easy to do! Great to make and batch freeze so you always have some to hand.

Ingredients

  • Butternut squash approx 1kg chunked
  • 1 onion chopped
  • 2 x garlic cloves chopped
  • 2 sprigs of fresh rosemary
  • 1 litre of veg stock

Preparation time 10mins
Cooking time 35mins

Preparation

Step 1

Put Squash Rosemary & Garlic in a heated pan for 5mins
Add stock & bring up to boiling then simmer for 25 mins
Take out tough rosemary stalks but not leaves
Blend, sieve if necessary serve!
