Ingredients
- 1 head romaine lettuce, chopped or
- shredded
- 4-6 hard boiled eggs, sliced
- 1/2 c shredded Parmesan cheese
- 1/2 pkg meatless bacon, cooked, crumbled
- (Favorite dressing)
- (1 T minced garlic)
- (1/2 t salt, dash pepper)
- (2-3 T olive oil)
- 2 c plain yogurt
- 3/4 c buttermilk
- (1 T lemon juice)
- 1/2 c walnuts
- (3/4 c cracked ice)
- 2 lg cucumbers, peeled & seeded
Preparation
Step 1
Hard boiled eggs: In med saucepan, cover eggs w/
water, 1 t salt added. Bring to a boil, cover, remove from
heat & set aside for 20 min. Drain water & let eggs cool
before peeling.
Layer lettuce then eggs in med sized bowl. Sprinkle
on Parmesan cheese and crumbled bacon. Add
desired amount of dressing. Toss.
Soup: Add all ingredients to blender. Process until
creamy. Chill for at least I hr. Serve w/ sprinkle of
paprika.
