Dragon Breath Chili

Ingredients

  • oil to cover bottom of large pot
  • butter
  • 1 lb boneless chuck
  • 2 lbs ground beef
  • 1 lb ground sweet italian sausage
  • 1 head garlic - minced
  • 2 tsp granulated onion
  • 2 tsp granulated garlic
  • 5 jalepenos (3 with seeds, 2 without)
  • 3 onions - diced
  • 2 tbs chili powder
  • 2 tsp hot paprika
  • 2 tsp ground cumin
  • 2 tsp cayenne pepper
  • 2 tsp kosher salt
  • 2 tsp ground black pepper
  • 1 29oz can tomato sauce
  • 1/2 cup chicken stock
  • 1 15 oz can red kidney beans with juice (goya)

Preparation

Step 1

In large stock pot over high heat, add butter and oil.

Add japelenos and onions and cook until carmelized.

Add garlic and saute a minute longer.

Add chuck to brown.

Add ground beef and sausage to brown.

Cook until all meat is brown and cooked through.

Add spices, tomato sauce, stir in chicken stock, then beans.

Lower heat and simmer with cover for atleast 2 hrs.
