Zucchini Tomato Casserole

Ingredients

  • 1 c. green onions, sliced
  • 5 c. zucchini, cubed
  • 1 clove garlic, minced
  • 2 T. garlic salt
  • 2 tomatoes, chopped
  • 1/2 t. dried basil
  • 1/2 t. dried oregano
  • 1/2 t. paprika
  • 1 1/2 c prepared rice
  • 2 c. shredded Cheddar cheese

Preparation

Step 1

Sauté onions, zucchini and garlic until tender; set aside. Combine remaining ingredients together; add onion mixture. Spread unto a greased 1 ½ qt. casserole dish; bake at 350 degrees until heated through, about 25 minutes.
