Can be eaten with tortilla chips, or as a side. The way it called for in the dish I made last night was served with grilled tuna steaks (which we love).

Ingredients

  • 2 ripe avocados, peeled, pitted and diced
  • 1 small sweet onion, chopped
  • 1 15-oz. can black beans, drained and rinsed
  • 1 tomato, diced
  • Juice of 2 limes
  • 1/4 cup olive oil
  • 2 jalapeno peppers, seeded and chopped
  • 1/4 cup fresh cilantro, chopped
  • 2 cloves garlic, minced
  • Salt & Pepper to taste

Step 1

Combine all ingredients in a bowl and allow to sit about 1 hour for flavors to blend.
