Tortellini Soup

  • 2 cloves garlic, crushed
  • 1 TBL butter
  • 2 (13 3/4 oz.) cans chicken broth
  • 1 (8 oz.) package fresh or frozen cheese tortellini
  • 1 (10 oz.) package fresh or frozen spinach, thawed
  • 1 (16 oz) can stewed tomatoes, undrained and coarsely chopped
  • grated parmesan cheese


Servings 6


Step 1

In large saucepan, over medium-high heat, cook garlic in butter for 2 to 3 minutes. Add broth and tortellini; heat to a boil. Reduce heat; simmer 10 minutes. Add spinach and tomatoes; simmer 5 minutes more. Serve topped with cheese.
