Manhattan Clam Chowder

Ingredients
- 4 slices bacon, (diced)
- 1 small onion (diced)
- 2 cans clams (300g)
- 2 cups potatoes (diced)
- 1.5 cups water
- 1/3 cup celery
- 1 large carrot (diced)
- 1 large can diced tomatoes (796ml)
- 2 teaspoons parsley
- 1 teaspoon salt
- 1/4 teaspoon dried thyme leaves
- 1/8 teaspoon pepper
Preparation
Step 1
* Cook and stir bacon in large pot until crisp.
* Remove and put aside.
* Add onion and stir fry until tender.
* Drain clams, reserving liquid.
* Add clam liquid, potatoes, carrots, water and celery.
* Cook until potatoes are tender, about 10 minutes.
* Add clams, tomatoes (with liquid) and the remaining ingredients.
* Heat to boiling, stirring occasionally.
* Stir in crisp bacon pieces and serve.
