Ingredients
- CHICKEN:
- 6 chicken breast halves
- 1/2 cup milk
- 1/2 cup flour
- 1 teaspoon dried thyme
- salt and pepper to taste
- 1-2 tablespoons vegetable oil
- GLAZE:
- 1 16-ounce can unsweetend tart cherries (2 cups frozen unsweetened tart cherries can be substituted for canned cherries - use 1/2 cup cherry juice or water in place of canned juice)
- 1/2 cup brown sugar
- 1/4 cup sugar
- 1 teaspoon prepared yellow mustard
Preparation
Step 1
Rinse chicken and pat dry.
Combine flour, thyme, salt and pepper.
Dip chicken in milk; then flour mixture, coating evenly.
Heat oil in large skillet, add chicken and brown on all sides.
Place chicken in 13 x 9 baking dish and bake, covered with foil, in preheated 350 degree oven for 30 minutes.
Meanwhile, drain cherries and reserve 1/2 cup juice.
Combine cherry juice and sugars in a small saucepan, mix well, and bring to a boil over medium heat.
Add mustard, mix well.
Cook 5 minutes or until sauce is slightly thickened.
Stir in cherries.
After chicken has baked 30 minutes, remove from oven and uncover.
Spoon hot cherry mixture over chicken and bake, uncovered, for 15-20 minutes or until chicken is tender.
Serve immediately.
