Ingredients
- 3 medium-size cucumbers, trimmed and sliced thin (4 cups)
- 1/2 cup golden raisins
- 3/4 cup water
- 1/2 cup lime juice
- 1 package (about 2 ounces) powdered fruit pectin
- 5 cups sugar
- Green food coloring

Preparation
Step 1
1 Combine cucumbers, raisins, water, lime juice and pectin in a kettle. Heat quickly, stirring often, to boiling.
2 Stir in sugar, then a few drops food coloring to tint pale green. Heat, stirring constantly, to a full rolling boil, then cook, stirring constantly, 1 minute; remove from heat.
3 Ladle into hot sterilized jars; seal following manufacturer’s directions. Cool; label; date.
Store in a cool, dry place.
Makes six 8-ounce jars
