Five Bean Soup

Ingredients

  • 2 Tbsp Extra-virgin olive oil
  • 3 cloves garlic, minced
  • 1 medium onion, diced
  • 1/4 c celery, diced
  • 1/2 c carrots, diced
  • 3 Tbsp barley, rinsed
  • 3 c water
  • 1 can pinto beans
  • 1 can black beans
  • 1 can kidney beans
  • 1 can Navy beans
  • 1 can Garbanzo beans
  • 1 c sweet corn, fresh or frozen
  • 1 can diced tomatoes with roasted onion
  • 1/2 tsp dried basil
  • 1-1/2 tsp crushed bay leaf
  • 1 tsp sea salt

Preparation

Step 1

Heat oil in a soup pot, saute garlic and onion until the onion is translucent. Add water, celery, carrot, and barley, beans, corn, tomatoes and herbs.

Add salt, cover and simmer 30 minutes.

Serve.
