Pressure Cooker Pulled Pork

This is a quick and easy way to prepare BBQ Pulled Pork using a pressure cooker and it tastes great!

Ingredients

  • 1 (4 to 5 pound) pork shoulder or butt
  • 2 tablespoons light brown sugar
  • 1 tablespoon chili powder
  • 2 teaspoon paprika
  • 2 teaspoon salt
  • 1 teaspoon pepper
  • 1 teaspoon dry mustard
  • 1 tablespoon vegetable oil
  • 1 1/2 cups chicken stock or broth
  • 2 tablespoon cider vinegar
  • 1 teaspoon liquid smoke
  • 1 bottle (16 ounce) BBQ sauce

Preparation

Step 1

Cut pork into 2 inch thick slices.

Combine brown sugar, chili powder, paprika, salt, pepper and mustard for a dry rub. Rub onto the surface of all cuts of pork.

With lid off, heat oil on High or Brown til sizzling. Place rubbed pork in cooker and brown on each side.

Add broth, vinegar and liquid smoke. Secure lid and cook on HIGH for 100 minutes.

Release pressure naturally for 15 minutes then quick release.

Use tongs and remove pork from cooker and drain all liquid.

Put BBQ sauce in cooker (lid off) on HIGH or Brown setting until simmering. Pull or shred pork into simmering sauce.

Serve and enjoy!
