Mushroom, Bacon and Sweet Onion Quiche

Ingredients
- 3 tablespoons olive oil
- 2 medium yellow onions, sliced
- 8 ounces sliced fresh mushrooms
- 8 slices Hormel® Microwave Bacon, cooked according to package directions
- 10 large eggs, beaten
- 1/2 cup whipping cream
- 1/2 cup shredded Swiss cheese
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1 fresh or frozen 9-inch pie crust

Heat oven to 350°F.

In large skillet, heat oil. Add onions; sauté until translucent and lightly browned. Add mushrooms; cook until moisture is evaporated.

Chop bacon; add to skillet. Remove from heat.

In large bowl, mix eggs, cream and cheese. Add salt, pepper and mushroom mixture. Mix well; pour into pie crust.

Bake quiche 45 minutes or until center is set.
