Bruschetta with Tomato and Basil

Ingredients

  • 1 cup diced ripe tomatoes
  • 2 tablespoons chopped fresh basil leaves (about 4 leaves)
  • 1 teaspoon extra virgin olive oil
  • 1 teaspoon red wine vinegar
  • 2 Tablespoons finely chopped onion
  • 1/4 teaspoon garlic powder
  • 1/2 teaspoon Italian seasoning
  • 1/8 teaspoon salt and freshly ground black pepper
  • 1 loaf French or Italian bread, sliced diagonally in 1/2 -inch thick slices
  • 1/4 c extra virgin olive oil

Preparation

Step 1

Set oven to broil on “Hi”. Line baking sheet with foil. Arrange pieces of bread in a single layer and brush with olive oil. Place under broiler and watch closely!!! It will burn very quickly!!!
In a small bowl, combine tomatoes, basil, olive oil, red wine vinegar, onion, garlic powder, and Italian seasoning. Mix well to combine. Season to taste with salt and black pepper.
Spoon tomato mixture on toasted bread slices and serve.
