Ingredients
- 1 cup unsalted butter, at room temperature
- 1 cup (packed) light brown sugar
- 6 large eggs
- 2 cups all-purpose flour
- 2 teaspoon baking powder
- 1/4 teaspoon ground nutmeg
- Pinch of salt
- 3 ripe bananas, mashed
- 1 teaspoon pure vanilla extract
Preparation
Step 1
Preheat oven to 350°F. Butter and lightly four a 9“x5” loaf pan.
Cream the butter and brown sugar in a large bowl with an electric mixer. Add the eggs one by one, beating well after each addition. Combine the dry ingredients in a small bowl and add to the butter mixture, a little at a time, beating well after each addition. Add the bananas and vanilla and mix to combine.
Pour the batter into the prepared pan. Bake until a skewer inserted in the center of the loaf comes our clean, about 1 1/2 hours.
Cool the loaf in the pan for 10 minutes and then turn it out onto a rack to cool completely.
