Sunny Citrus Cake

Ingredients
- CAKE
- 1 package yellow cake mix
- FILLING
- 1 package (3.4 oz) lemon pudding mix
- 1 cup milk
- 1 tablespoon lemon juice
- 1 container (12 oz) frozen whipped topping, thawed, divided
- TOPPING
- 1 banana, sliced
- 2 Kiwis, peeled and sliced
- 1 can (8oz) mandarin orange slices
- Grated peel of 1 lemon

Step 1
For cake, prepare cake mix according to package directions. Divide batter evenly between two 8 or 9 inch greased and floured cake pans, or 2 greased flan pans lined with parchment circles. Bake according to package directions. Cool in pan on wire rack for 15 minutes; remove from pans. Cool completely.
For filling, combine pudding mix, milk and lemon juice in medium bowl; mix well. Fold in 2 cups of the whipped topping; reserve remaining whipped topping for garnish. Spread filling evenly onto tops of both cake layers.
For fruit topping, arrange banana, kiwi and orange slices on layers; sprinkle with lemon peel.
Pipe remaining whipped topping over cakes.
NOTE: Banana slices can be dipped into lemon juice or lemon-lime soda to minimize browning
