Sour Cream Sugar Cookies

Ingredients

  • 1/2 cup unsalted butter, softened
  • 1 cup sugar
  • 1 tsp. baking powder
  • 1/4 tsp. baking soda
  • 1/2 cup sour cream
  • 1 egg
  • 1 tsp. vanilla
  • 1 tsp. lemon peel
  • 2 1/2 cup all-purpose flour
  • meringue powder icing (see below)
  • 2 Tbsp. meringue powder
  • 1/4 cup water
  • 2 3/4 cups powdered sugar

Preparation

Step 1

Preheat the oven to 375 degrees.

In a large mixing bowl, beat the butter on medium to high speed for 30 seconds. Add the sugar, baking powder, baking soda and a dash of salt; beat until combined.

Beat in sour cream, egg, vanilla and lemon peel. Beat in as much of the flour as you can. Knead in the remaining flour. Divide the dough in half. Cover and chill for 1 hour.

On a well-floured surface, roll half of the dough at a time to a 1/4-inch thickness. Using cookie cutters, cut into desired shapes.

Place cutouts at least 1-inch apart on an ungreased cookie sheet.

Bake for 7 to 8 minutes or until the edge are firm and the bottoms are lightly browned. Transfer to wire racks to cool.


MERINGUE POWDER ICING
Beat the meringue powder and water until combined. Beat in the powdered sugar. Tint as desired.
