Ingredients

  • 1

    tbs olive oil

  • 2

    garlic cloves minced

  • 2

    onions chopped

  • 28

    oz San Marzano crushed tomatoes

  • 3

    cups vegetable stock

  • 4

    celery stalks sliced

  • 2

    carrots sliced

  • cup ditalini pasta

  • 2

    tsp dried oregano

  • 2

    tbs grated parmesan cheese

  • 19 oz can cannelleni beans drained and rinsed

  • 19 oz can red kidney beans

  • 4

    cups water

  • ¼ - ½

    cup frozen peas

  • ¼ - ½

    cup frozen Italian green beans

  • ¼ - ½

    cup frozen corn

Directions

In large pot heat oil. Add onions and garlic and cook until softened (about 5 minutes) Add tomatoes, stock, carrots, celery, pasta and 3 cups water. Bring to a boil, stirring as needed to keep pasta from sticking. Reduce heat and simmer 15 mins. Add frozen vegetables and simmer for 10 mins. Add beans, oregano and pepper. Return to boil, stirring as needed. Serve sprinkled with parmesan cheese.
