Ingredients

  • Cut left over pork roast in cubes (trimmed of fat) or cut 8 thin sliced pork chops cut in strips
  • 2 Tablespoons of vegetable oil
  • 1 cup onion (sliced thin)
  • 1 cup celery (sliced thin)
  • 8 oz package of button mushrooms (sliced thin) or canned mushrooms
  • 1 can bean sprouts
  • 1 can of low sodium chicken broth
  • Left over pork gravy (optional)
  • 1 tbsp. soy sauce
  • 2 tbsp. cornstarch
  • measurements are all approximate
  • rice
  • chow mein noodles

Preparation

Step 1

Brown left over pork cubes in oil until brown. Remove from pan. or saute fresh pork strips in oil until brown on each side. Remove

Add celery and onion and saute until almost tender but not brown. Stir in fresh mushrooms if using. Return pork to celery, onions and mushroom mixture. Cover with can of chicken broth. Bring to a boil, cover and turn to a simmer for about an hour.

Add canned mushrooms (if using) and bean sprouts. Add pork gravy or thicken with mixture of soy sauce and cornstarch*

* in a small ball mix cornstarch with part soy sauce. Add thickener to center of stir fry and stir until well blended. Bring to a slight boil and return to simmer.

Serve over chow mein noodles &/or cooked rice with a splash of soy sauce to taste.
