BROCCOLI RICE CASSEROLE

Ingredients

  • 1 small onion, chopped
  • 1/2 c. chopped celery
  • 1 (10 ozs) pkg. frozen chopped broccoli, thawed
  • 1 Tb. butter or margarine
  • 1 (10-3/4 ozs) can 98% reduced-fat condensed cream of chicken (or mushroom) soup, undiluted
  • 6 ozs. 2% Velveeta, diced
  • 1 (5 ozs) can (skim) evaporated milk
  • 3 c. cooked (brown) rice

Preparation

Step 1

Preheat oven to 325. Grease an 8-inch square baking dish. In large skillet over medium heat, saute onion, celery and broccoli in butter for 3 - 5 minutes. Stir in soup, cheese, and milk; heat until smooth. Add rice; stir until blended. Pour into prepared pan. Bake uncovered for 25 - 30 minutes or until hot and bubbly.
