Ingredients
- 3 pounds Small Red New Potatoes
- 4 cloves Garlic
- 4 sprigs Chives
- 1/4 cups Olive Oil
- 1 teaspoon Sea Salt
- 1 teaspoon Black Pepper

Step 1
Preheat oven to 400 degrees F.
Wash red new potatoes and then pat dry. Cut them in quarters and place on a cookie sheet in one layer.
Mince garlic and chives (use all of the chives, including the tops) and sprinkle the mixture on top of the potatoes on the cookie sheet.
Drizzle olive oil on top of potatoes, garlic and chive mixture. Add salt and pepper then mix with your hands to make sure everything is coated well.
Bake in the oven for anywhere from 45 minutes to an hour. Turn potato mixture over a few times while baking. When they reach your desired crispness, remove from the oven and let them cool on a paper towel to absorb extra oil.
