Ingredients

  • 1 1/4 cup vegetable broth
  • 1 pkg. cous cous
  • 1 tsp lemon rind
  • 1 tbls. olive oil
  • 2 tbls lemon juice
  • 3/4 tsp dijon mustard
  • 1 cup quartered cherry tomatoes
  • 1/4 cup chopped red onion
  • 1/4 cup parsley
  • 1 can 16 oz small white beans

Preparation

Step 1

boil broth
add cous cous -fluff after cooking
add all other ingredients
refrigerate
