Spring Zucchini Cupcakes

Ingredients

  • 1/2 veg oil
  • 2 eggs room temp
  • 1/4 cup buttermilk
  • 1 cup grated zuccini
  • 1/2 tsp lemon juice
  • 1 1/2 cups sugar
  • 2 cups cake flour
  • 1 tsp salt
  • 1 tsp baking soda
  • 1/2 tsp cinnamon
  • 1/2 cup chopped walnuts
  • 1/2 cup chocolate chips
  • powdered sugar for dusting

Preparation

Step 1

1. preheat oven to 350.
2. mix oil, eggs, buttermilk, zucchini and lemon juice
3. combine dry ingredients in seperate bowl
4. combine wet and dry ingredients, stir until just combined
5. add nuts and chocolate chips
6. scoop batter in tray
7. bake for 24 minutes or until toothpick inserted in a cupcake comes out clean
8. place on rack to cool
dust with powdered sugar
