Ingredients
- 4 1-ounce squares unsweetened choclate
- 1 cup butter
- 2 cups confectioners sugar
- 4 eggs
- 1 teaspoon vanilla
- 1 teaspoon peppermint extract
- 1 cup vanilla wafers
- 1/2 cup candied cherries.

Step 1
Melt choclate cool, and set aside. Using an electric beater, beat butter while gradually adding sugar (about 15 minutes); add cooled melted chocolate, Beat 5 more minutes. Beat eggs in 1 at a time. Mix in vanilla and peppermint.
Grind vanilla wafers until they are the consistency of beat crumbs either in an electric drink mixer or using a rolling pin. Sprinkle a tablespoon of vanilla crumbs in the bottom of paper cupcake holders. Fill each holder 1/2 full of chocolate mixture, add a sprinkle of vanilla wafer crumbs on top and 1/2 of a candied cherry. Freeze at least 3 hours
