Ingredients
- 1 lb Maple Bacon
- 5 Medium Potatoes
- 1 Medium Onion
- 1 Red Pepper
- 2 Large Celery Stalks
- 3 Large Carrots
- 1 Can Evaporated Milk
- 2 Cans Cream-Style Corn
- 2 Cans Whole Corn
- 2 Cups 1% Milk
- 1/4 Cup Parsley
- Salt & Pepper

Step 1
Peel and dice potatoes into small cubes. Cook until done but still firm (potato will soften during final simmer). Drain and set aside.
Crisp Maple Bacon. Drain grease and dry bacon. Crush Bacon into crumbs, set aside.
Dice all veggies, saute in pan with olive oil until soft.
In large pot, add all ingredients. Simmer chowder for about 20 minutes, stirring frequently. Serve hot, chowder will thicken as it stands.
