Ingredients

  • 1/4 cup flour
  • 1 tsp salt
  • 3/4 tsp seasoned pepper
  • 4 boneless pork chops
  • 1 tbsp olive oil
  • 3 minced garlic cloves
  • 1/3 cup balsamic vinegar
  • 1/3 cup chicken broth
  • 3 roma tomatoes
  • 2 tbsp capers

Preparation

Step 1

Combine first three ingredients in a shallow bowl and dip chops in mixture.
Cook pork chops in hot oil in a large skillet over medium heat 1-2 minutes each side. Remove from skillet.
Add garlic to skillet and saute 1 minute. Add vinegar and broth. Stir in tomatoes and capers. Place chops back in skillet.
Bring to a boil, cover, and reduce heat. Simmer 4-5 minutes until chops are done. Serve with tomato mixture.
