tbsp olive oil/butter
lbs new potatoes, unpeeled, halved
tbsp minced garlic
tsp chopped thyme
tsp chopped rosemary
Heat oil in a large, cast iron skillet over medium high heat. Add potatoes and next 3 ingredients. Toss. Remove skillet and place in oven. Roast potatoes, uncovered, at 450 degrees for 30 minutes, stirring occassionally. Sprinkle with salt and pepper and roast 6 more minutes.
