Ingredients
- 1 1/2 lb. courgettes (zucchini)
- 2 Tbsp. oil
- 1/2 tsp. cumin seeds
- 1/2 tsp. mustard seeds
- 1 onion, thinly sliced
- 2 garlic cloves, crushed
- 1/4 tsp. turmeric
- 1/4 tsp. chilli powder
- 1 tsp. ground coriander
- 1 tsp. ground cumin
- 1/2 tsp. salt
- 1 Tbsp. tomato paste
- 1 14-oz can chopped tomatoes
- 2/3 cup water
- 1 Tbsp. fresh cilantro
- 1 tsp. garam masala
Preparation
Step 1
Wash the courgettes and trim the ends off. Slice them in 1/2 inch slices.
Heat the oil in a large heavy pan and fry the cumin and mustard seeds for 2 minutes until they start to pop.
Add the onion and garlic and fry for 5 minutes.
Add the turmeric, chilli powder, ground coriander, ground cumin and salt and fry for 2 minutes.
Add the courgettes all at once and cook for 5 minutes stirring so they do not burn.
Mix together the tomato paste and chopped tomatoes and add the the pan along with the water. Cover and simmer for 10 minutes until the sauce thickens.
Stir in the cilantro and garam masala, then cook for 5 more minutes or until the courgettes are tender.
