Ingredients
- 10 oz canned kernel corn
- 10 oz canned creamed corn
- 1/2 small onion pureed in a food processor
- 2 eggs lightly beaten
- 1 1/2 cups flour
- 1 1/2 tsp salt
- 1 tsp mixed seasoning (any combination of herbs, such as basil, tarragon, and oregano)
- 1/4 tsp pepper
- 2 tbsp baking powder
Preparation
Step 1
Mix all the ingredients together. Use two tbsp to shape mixture into ovals and deep-fry in hot fat. Fritters will blow up to double in size.
