Tomato-Marinated cherry tomatoes

Ingredients

  • 2 packets cherry tomatoes (you can use mix the different varieties of tomatoes or just use one kind)
  • 1-2 tbsp apple cider vinegar
  • 2-4 tbsp good balsamic vinegar
  • 1 tbsp agave syrup (optional) or honey if not paleo
  • fresh ground pepper
  • fresh basil (chopped)
  • salt (optional)

Step 1

Skinned Cherry Tomatoes

Drop in boiling water for only 10 seconds, then drop in ice-water to stop the cooking. Just a little prick with a sharp knife before you drop them in the water is enough, you don't need to cut a cross. It will help the skin burst so you can easily peel them.

Mix the rest of the ingredients together & drizzle over the tomatoes. Mix well. Chill.
