- 4 to 6 pieces thawed flounder
- 1 cup panko bread crumbs
- 1/2 cup parmesan cheese
- 1 egg
- 2 tablespoons olive oil

How to Make It
Begin by beating your egg in a bowl and mixing together one cup of Panko bread crumbs and 1/2 cup of Parmesan cheese and spreading it on a plate. Next warm your two tablespoons of olive oil in a large pan. Place each piece of wish in the egg and roll it to make sure it is coated well.
Remove your fish from the egg and roll in the panko and Parmesan mixture. You may need to use your fingers to rub in the breading to make sure that it sticks to the fish. Roll the fish several times in the mixture until it is covered.
Now place your fish into your heated pan and sear on each side for approximately three minutes or until the fish becomes flaky.
Once your fish is fully cooked, remove it from the pan and place on a paper towel to let any excess oil drain. Then serve with grilled veggies of your choice (you can find a great recipe for grilled veggies
I have a similar recipe using tilapia, but it works on orange roughy, too. Sometimes I add Italian seasoning to the panko/Parmesan mix, other times I add chile powder, cayenne and cumin. There are lots of ways to tinker with it, and they’re all good!

What a wonderfully simple, fast and easy recipe to make – and it really does sound delicious. I’ve been trying to get my Honey/Hubby to eat more fish – more often- but he tends to only like it deep fried as in “FISH & CHIPS!
